Who would have thought a pasta sauce would be such a good metaphor for love, huh?
Ingredients
Pasta
2 cups semolina flour
1/2 cup + 2.25 tablespoons of water
1/3 teaspoon salt
Sauce
1 96-oz can of whole peeled San Marzano tomatoes
1/4 cup of EVOO
4 tablespoons of butter
8 garlic cloves, minced
1 teaspoon of red pepper flakes
1 tablespoon of dried oregano
1 medium carrot, cut into large chunks
1 medium onion, cut in half
1 large stem of fresh basil
Kosher salt and freshly ground black pepper
Steps
Pasta steps
1) In a KitchenAid™ mixing bowl, add the flour, salt, and water and turn the mixer on low. If it is too dry add a little bit of water at a time until appropriate consistency
2) Cover the dough with a towel and let rest for 30 minutes
3) Kneed the dough and then place on a lightly floured surface.
4) Roll out dough until roughly 1/8th of an inch thick
5) Roll up and slice for fettuccine, use cookie cutters for fun shapes, or form it into whatever shape your heart desires.
6) Bring water that is as salty as the ocean to a boil and cook pasta for 6-7 minutes.
(You can also leave this to dry overnight if you're not planning on eating it all today)
Pasta
1) Adjust the rack in your oven to the lowest position and preheat to 300°f. While it is preheating, empty your tomato cans into a bowl and crush all of the tomatoes until they're all 1/2 inch pieces or smaller. Scoop out 3 cups and put them in a sealed container in the fridge to be used later.
2) Place the Dutch oven on the stove. Heat the olive oil and butter on medium heat until the butter is melted. Toss in your garlic and cook until softened and smelling delicious. About 2 minutes (you want to make sure it's not too hot. You don't want to brown the garlic)
3) Add in pepper flakes and oregano and stir. Cook until fragrant (1 minute or until your nose says to stop)
4) Add tomatoes, onion, carrot and stir to combine. Lightly salt and pepper until it feels right, add the basil stem, then bring to a simmer over high heat
5) Toss that bad boy in the oven with the lid slightly ajar. Go make yourself your favorite beverage and curl up on the couch with a good tv show because you've got some waiting to do. You're going to let it cook, low and slow, stirring it every hour or so (or whenever you end an episode of your favorite show). It will ultimately be in there for about 6 hours so pick a good bingeable show. If you find that it is starting to brown or boiling, reduce the heat.
6) After about 6 hours, remove it from the oven. Grab your favorite tongs and pull out the onions, carrots, and basil stem and dispose of them. Grab the leftover tomatoes from the fridge and stir to combine. Add in additional salt, pepper, and chopped herbs to your tasting and enjoy this delicious sauce with a pasta if your choice!
Notes
There's lots of ways that you can adjust this recipe. Personally my favorite is to triple the amount of red pepper in here to make it an arrabiata sauce. You can also add in proteins as well!
