Why it's special

This is our easy weeknight dinner. Love it after a long trip or if we are feeling under the weather.

Ingredients

Thai curry paste- we prefer yellow curry Coconut milk Broth- recommend bone broth for the gut health benefits Rice noodles Veggies- spinach is great Protein- we usually use eggs

Steps

Add curry paste and coconut milk to a pan, heat until simmering Add broth and cover until boiling. Estimate 1cup per person Once boiling add rice noodles and cook according to time required When 3minutes remain on the noodles add the spinach & crack in the eggs (this will poach them to soft boil) Serve with the garnishes! Goes well with lime & cilantro
