Tortellini Caprese Bites

Always good to have different options and hopefully you'll be going to friends and family or having them over to share lots of great memories over food! You can't go wrong getting together over food! Food brings us all together :)

Why it's special

Super easy and gets lots of great feedback from everyone. Something different to bring to a dinner party or just have on hand for friends. Seems simple, but yet elegant and very versatile. We've brought this to several parties and then enjoy any leftovers. Hope you enjoy!

Ingredients

36 frozen Italian tortellini 1 pint grape tomatoes 12 fresh basil leaves, chopped 1 (8 ounce) container fresh mozzarella cheese, cut into 12 pieces 1/4 cup olive oil 2 tablespoons balsamic vinegar 1/8 teaspoon salt 1/8 teaspoon pepper 12 wooden skewers

Steps

1. Cook tortellini according to package directions, then drain and rinse with cold water. 2. On each of 12 wooden skewers, thread 3 tortellini, 1 grape tomato, 1 piece of mozzarella, and 1 basil leaf. Repeat until all ingredients are used. 3. Arrange the skewers on a serving platter. 4. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. 5. Drizzle the dressing over the skewers or serve it on the side.

Notes

White Balsamic Vinegar is the key here, don't use traditional. Fresh basil is important as well! There are only a few ingredients so make sure they are high quality. Mozzarella balls or pearls are easier than cutting up pieces of fresh mozzarella.
