There are so many reasons that I love this recipe: Kimaya and Tanay match perfectly with each other like Chia seeds match perfectly with your choice of milk. How could I not include the recipe introduced to me by Kimaya! I have used this recipe many times for making a ‘healthy, no guilt dessert’ since it’s super easy to accommodate any guest with allergies, diet restrictions,… It’s an easy recipe for making it together the night before for a stress-free morning It is perfect for breakfast or for a light dessert. You can make it ahead of time for the whole week. There are minimal dishes involved for making this recipe

Ingredients

Chia Seeds 2 Tbsp Milk 1/2 cup Optional: Green Cardamom Powder 1/8 tsp Saffron Strands per your taste

Steps

In a jar mix the Chia seeds and the milk. It helps to add the milk to Chia seeds while constantly stirring. That will ensure that there will be no clumps. Add the optional cardamom powder and saffron seeds when you are stirring the Chia seeds in the milk. Place the jar overnight in the refrigerator.

Notes

Mixing directly in a jar with lid will allow you to shake the jar rather than whisking/stirring the Chia seeds in milk. You can top the pudding with your favorite berries and/or dry fruits, nuts, granola. You can make a chocolate version by adding 1 tsp of cocoa powder. You can make this pudding with your choice of milk. My choice is coconut or almond. You can add choice of sweetener like honey, agave nectar, sugar… 1 tsp is enough for this recipe. The sweetener can be added when mixing the pudding or just before serving. If you can’t refrigerate the pudding overnight, refrigerating it about 4 hours works as well. You can follow the same steps and make a pudding using Basil seeds instead of Chia seeds.
