Brazilian Carrot Cake

Why it's special

Kimmy and I enjoyed this cake on the first ever annual summer pool day! She loved the cake and the pool day tradition has stood strong throughout the years!

Ingredients

Cake: 3 large carrots, chopped 3 eggs 1 cup oil 2 cups sugar 2 cups all-purpose flour 1 tbsp baking powder Glaze: Magarine or butter Milk Chocolate powder Semi-sweet or bittersweet chocolate bars

Steps

Cake: Blend the carrots (add them gradually), eggs, and oil in a blender. Separately, sift and mix by hand the flour, sugar, and baking powder. Pour blended mixture into bowl with dry ingredients and mix thoroughly, then bake at 350° for 40 mins or whatever you usually do for a cake (we work on pure vibes only here). Glaze: This part is based on vibe units of measurement as well. Add maybe a tablespoon of margarine or butter to a pan on medium heat. Then add about 1/4 cup of milk and 1/4 cup of chocolate powder. Then add a couple of pieces of the semi-sweet or bittersweet chocolate bars. Mix well and see if the consistency is thick enough. If too thick: add milk. If not thick enough: add pieces of chocolate. Pour glaze over carrot cake and enjoy!
